Whether you are taking a well-earned five-minute break, entertaining friends or family, or just baking for or with kids, these cookies promise to fill the house with a delicious aroma, the one that creates magical memories of home and childhood and good times.

The addition of almonds gives these cookies a delicious crunch.

Makes about 50

230 gr. /8 oz. soft unsalted butter

100 gr. /4 oz. /1/2 cup caster superfine sugar

2 eggs lightly beaten

30ml/2 tbsp. ground almonds

400 gr. /14 oz. /3.5 cups all-purpose flour

60ml/4 tbsp. cornflour

  1. In a mixer with a guitar hook, beat the butter and sugar together until creamy.
  2. Gradually add the eggs, beating well after each addition, then beat in the almonds.
  3. Sift over the flour and cornflour and mix to a soft dough.
  4. Lightly knead the dough on a floured surface for a few seconds, until smooth.
  5. Divide the dough into to two, shape each piece into a ball, then flatten slightly into a round – this makes it easier when you begin to roll it out. Wrap in a plastic wrap to prevent the dough from drying out and chill for about 30 minutes, or until firm, but make sure it is not too stiff to roll.
  6. On a floured surface, roll out the dough lightly and evenly in one direction, only to a thickness of about 3mm/ 1/8in. Always roll away from you and rotate the cookie dough occasionally to prevent it from sticking.
  1. Using your favorite cookie cutter – the Hebrew Alphabet ones are great for it – stamp out cookies of your chosen shape.
  2. Transfer the cookies onto the prepared baking sheets using a palette knife or a metal spatula. And place on the baking sheets, lined with parchment paper, spacing about 2.5cm/1in apart
  3. Preheat the oven to 180°c/350°F/4 Gas.
  4. Bake for 10 minutes. Until the cookies are a pale golden brown. Leave to cool down for 2-3 minutes, before you transfer to a wire rack to chill.
  5. Store them in an airtight container.

No matter what age are you, there’s little so enjoyable as a freshly baked cookie. Cookies are the ultimate treat to me. Or as we call it, עוּגִיָה – oogiya.
